Recipe #332: Breakfast Steak and Eggs

Serves 2

Ingredients:
1 tenderized round steak
2 T large eggs
1 C of milk
3 T Flour
Grease from frying the steak
Salt, pepper, cayenne, garlic powder

Procedure:
Season the meat as desired and "fork it" Leave it while you cook 2 sunny side up eggs.
When the eggs are done, start frying the meat in a very hot skillet with a mixture of oil and butter or just butter if you please. Cook each side for about 3-4 minutes.
Remove meat and keep warm.
Using the same skillet for the meat, add the flour atir it and blend it in well for a few minutes over medium to low heat.
Add the milk (or you can add more until you get the desired consistency that you like) and let it boil once while stirring it.
Season the gravy and pour over your steak.

This recipe is traditionally served with fried potatoes and biscuits for breakfast. If you're serving this for lunch, serve with mashed or baked potatoes with stir fried mushrooms and diced roasted bell peppers.
