Recipe #333: Flammkuchen

Recipe courtesy of the youngest CHEF i know.
Ingredients:
400 g flour
1 Paket Rapid Yeast
200 ml Water
4 onions
200 g bacon
100 g Buttermilk
100 g Creme fraiche
100 g Sour Cream
1 Tlsp Olive Oil
Salt and Pepper

Procedure:
1. Prepare the dough with the flour, yeast, water, olive oil and salt.
(The dough shouldn’t be sticky and should turn smooth and slightly stretchy)
2. Leave the dough to rise in a warm place for 30 min or until it has doubled.
(tip: place on the highest cabinet you have in the second floor or in your attic if you have one. You could also place it in an oven at 40-45 degrees)
3. Whilst the dough rises, prepare the onions and the bacon.
4. Cut the onions in very thin slices and cook in butter only until its translucent.
5. Cut the bacon into small cubes, toast it or fry it til crispy.
6. Mix the buttercream, creme fraiche and sour cream and season with salt and pepper.
7. Mix cooked onions with the creme fraiche mixture.
7. Preheat the oven at 220.
8. Put the dough onto a well oiled/buttered backing tray.
(Very thinly to get an even thin crust)
9. Cover with creme mixture and top with toasted bacon.
10. Back in the oven for 15 – 20 minutes.
11. Cut into thick slices and serve hot with a fresh salad of your choice!
