Recipe #343: Beef Fajita Nachos


Serves a party of 6
For the steak: (Please marinade a day before)
1 large flank steak 
1/4 c olive oil
1 lime, juiced
2 canned chipotle peppers + a little sauce
2 cloves garlic, peeled
half a handful of cilantro
To prepare the steak, combine olive oil, lime juice, garlic, chipotle peppers and cilantro place in blender and blend to a thick paste. Place meat in a large ziplock with the marinade and coat each side thoroughly. Seal and leave in fridge for at least 24 hours.


For the nachos: 
1 large onion, sliced into thin rings 
1/2 a green and 1/2 a bell pepper, sliced into thin rings 
1 T canola oil 
Sturdy tortilla chips (I like doritos cooler ranch) 
8 oz grated cheese (I used a mix of cheddar and jack) 
Guacamole, Salsa (make your own or you can gett bottled salsa too) and Sour cream 
Tabasco, Salt, Pepper and Garlic powder to taste


1. When you're ready to make the nachos, preheat oven to 350 degrees.
2. Grill steak 4 minutes per side (You can char grill it or put liquid smoke if you're too lazy and you choose to just fry it instead). Remove steak from grill and set aside to rest. 
3. In a large skillet, heat canola oil over medium-high heat till it's shimmering hot. Place in onions and peppers and let cook 3-5 minutes or until they start to get a little charred. 
4. Season with salt, pepper and garlic powder to taste as veggies are cooking. Once all veggies have cooked, remove from heat and set aside. 
5. Slice flank steak into strips against the grain, then chop slices into smaller bites. Place sauteed veggies on a cutting board and roughly chop them into smaller pieces. 
6. Arrange tortilla chips on a large cookie sheet or sheet pan (I needed 2). Sprinkle plenty of cheese on top. Place pan into oven or salamander until cheese melts. 
7. Top evenly with veggies and chopped steak. 
8. Return to oven and leave in just long enough to reheat everything but not cook the meat all the way through. 
9. Remove from oven and serve with lots of guacamole, salsa and sour cream. 


You WILL be full after this meal, and you WILL be happy!!
